Jessie's Homemade Truffles

My mama Jessie used to make these truffles  every Christmas and they are totally delicious but if you are calorie counting then I would leave right now. No cooking involved  either and this will give you about 30 truffles. They are also good with chopped nuts and or sultanas. I had to wash my hands in cold water several times whilst making these as they are a bit sticky, great excuse for licking you fingers though.



Ingredients

20 digestive biscuits crushed (I put mine in a blender)
3 desert spoons of cocoa
10 tbl spoons desiccated coconut ( and a little extra for rolling onto the finished truffles)
Pkt marshmallows (I cut one marshmallow into 4 pieces)
small tin of condensed milk
115g butter


Melt the butter in a large bowl and then add the condensed milk and stir to mix well, then add the cocoa powder, coconut and the crushed biscuits and mix well, this will form a sticky dough. Take a desert spoonful and flatten on your hand, place a marshmallow in the center and then form into a ball, once all done  roll each one in the coconut to coat entire truffle. Pop them onto a plate and put into the fridge for roughly an hour till they are chilled. They wont last long that much I can tell you.
